Course Description

The Certificate Course in Maritime Catering (CCMC) is a premier pre-sea training program designed for individuals who wish to build a professional career within the hospitality and catering department of the Merchant Navy. Regulated by the Directorate General of Shipping (DGS), India, and strictly adhering to the international standards of the STCW Convention, this residential course transforms aspiring candidates into skilled maritime hospitality professionals. Unlike land-based culinary programs, the CCMC focuses on the unique challenges of the marine environment, where catering staff are responsible not only for food preparation but also for the overall well-being, nutrition, and morale of a multicultural crew during long-haul voyages. The curriculum provides an intensive blend of culinary arts, food safety, and shipboard orientation. Trainees receive hands-on instruction in diverse cuisines, ranging from traditional Indian to international Continental dishes, while mastering the technical aspects of "Victualling Management." This includes inventory control, budgeting, and the implementation of high-level hygiene standards such as HACCP. Beyond the galley, the course incorporates mandatory STCW safety modules, including firefighting, personal survival techniques, and first aid, ensuring that catering personnel are fully integrated, safety-conscious members of the ship's emergency organization. Students also learn the essentials of housekeeping and front-of-house service, making them versatile assets for both cargo vessels and luxury cruise liners. Successfully completing the CCMC allows graduates to obtain an Indian Continuous Discharge Certificate (CDC) as a "Catering Participant." This opens the doors to a structured and rewarding career path that leads from Trainee Cook to the prestigious rank of Chief Cook or Catering Officer. In the global shipping industry, where quality nutrition is a cornerstone of operational safety, CCMC-certified professionals are highly valued for their discipline, technical expertise, and commitment to excellence. This course is the definitive gateway for those who seek to combine a passion for the culinary arts with the adventurous lifestyle of a global seafarer.
